Fruit and Nut Loaf

Serves 8-10 V Vegan Allergens: Milk unless replaced with plant based alternative. Oven temp 180c 350F Gas Mk4

Ingredients:

  • 1 Cup wholemeal flour
  • 1/2 tspn Salt
  • 1/2 tspn Cinnamon
  • 1/2 Cup Raisins or any other dried fruit left in the cupboard
  • 1/4 Cup of Dates, OR mashed Banana OR Apple
  • 1/4 Cup Nuts OR Sunflower Seeds
  • 13ml Clear Honey
  • 13ml Any cooking Oil
  • 25g Brown Sugar
  • 1/4 Cup wheat germ OR Crushed Weetabix OR Oatmeal OR Linseeds

METHOD

Preheat the oven to the correct temperature See above.

In a small bowl place 250ml of natural unsweetened yoghurt or vegan alternative. Stir.

In a large bowl place all the dry ingredients. Stir in the yoghurt mix and beat well. Turn into a greased loaf tin and bake for 45 mins – 1 hour.

Remove from the oven. After 10 mins turn out and allow to cool on a wire rack.

This is a healthy high fibre cake, low in sugar. Try it with butter for breakfast, lunch or a snack. Enjoy.
